Rice with Peas & Asparagus Tips
Summer is on the way! This is a great meal for hot weather because you don’t have to light the oven. It is a well-balanced and nutritionally sound dish.
4 cups stock (chicken or veggie)
1/2 cup brown rice
1 pound asparagus, cleaned & cut hard stem off
1 cup fresh peas
2 tbs olive oil
4 tbs freshly grated Parmesan cheese
Bring stock to a boil. They add rice, bring once more to a boil than lower flame to a simmer for 10 mins. Cut asparagus into 1inch pieces. Then add peas & asparagus, bring once more to a boil, then lower the flame immediately and continue cooking for 10 minutes more. Then add oil and half of the grated cheese. Spoon into serving bowls & add the remaining cheese on top and severe hot.
Notes;
Use can ulter this reciepe to suit your needs. You can add different veggies, chicken, beans, tofu, ect
Depending on the tpye of rice you use your cook time will vary.
